Ingredients: 

  1. SOAKED CASHEWS: 1 CUP

  2. WATER: 1-2 TABLESPOONS

  3. CLOVES OF GARLIC: 2

  4. LEMON JUICE: 1 TABLESPOON (THE JUICE OF 1/2 A LEMON

  5. APPLE CIDER VINEGAR: 1 TABLESPOON

  6. NUTRITIONAL YEAST: 2 TABLESPOONS

  7. KOSHER SALT & BLACK PEPPER: 1/4 TEASPOON EACH

  8. ROSEMARY: 1/2 A SPRING OR 1 TABLESPOONS

  9. SCALLIONS (GREEN ONIONS): 2 SPRINGS

Tools:

 

  1. BOILING POT IF USING THE QUICK SOAKING METHODS FOR THE CASHEWS

  2. SMALL FOOD PROCESSOR OR SINGLE SERVING BLENDER

  3. MEASURING CUPS/SPOONS

  4. STORAGE CONTAINER

     

Instruction

  1. Add all the ingredients to a food processor or single serve blender (small)

  2. After completely blended, scoop the content into a cheesecloth or fabric

  3. wrap tightly and place in the fridge for 4 hours or overnight, to allow all water to be completely removed. 

Storage

  • Store in refrigerator in a sealed container for up to 7 days. For longer storage, place in the freezer. 

CHEF TIPS

  1. Soaking Cashews: Quick Soak in a pot of water for 15 minutes. Overnight soak in water for 4-8 hours

  2. Rosemary and scallions can be replaced with herbs of your choice.

  3. Add a little more water If needed (teaspoon by teaspoon to ensure a good mix. )
